I absolutely love finding new recipes to try. I get tired of making the same thing over and over again. That’s how I became with our chicken and beef recipes. So I decided to branch out to the “other white meat”! I have only really every made BBQ Pork Chops in the slow cooker. Every other time I’ve tried doing something different, they don’t come out well. But this recipe was a winner! I LOVED it.
It has a really great sauce with it. If you’d like the sauce to go over mashed potatoes or rice, you’ll need to double the sauce. The recipe didn’t call for this either, but next time I make them, I’m going to marinate the pork chops in some balsamic vinegar to get them more tender. Yum!!! I served this with some good ole’ classic Stove Top Dressing, homemade rolls, and corn. My boys ate it up!
Balsamic Raspberry Pork Chops
(adapted by me from a recipe I’ve had from who knows where!)
4 boneless pork chops
Rosemary (to taste)
Oregano (to taste)
Salt Pepper
2 Tbs Butter
2 Tbs Olive Oil
Sauce:
1/2 cup Balsamic Vinegar
1/2 cup Raspberry Jam
4 Tbsp Orange Juice
Directions: Melt butter and olive oil in a skillet over medium high heat. Season pork chops on both sides with Rosemary, Oregano, Salt, and Pepper to taste. Brown on each side about 5-6 minutes, being sure they are cooked through all the way. Once cooked through, remove pork chops from skillet and keep warm. Mix together the vinegar, jam, and orange juice and add to skillet. Bring to a boil and then reduce heat to simmer while it thickens and reduces. Plate the pork chops and pour sauce over the top. Enjoy!
