I will be the first to admit that I don’t get too excited about seeing a bag of Cadbury Mini Eggs at the grocery store. What? I’m crazy, right? I’ve never been a fan of candies with heavy coatings (with the exception of M&M’s) so I generally stuck to my Reese’s eggs at Easter and I was happy.
But this year, I decided to try eating the ever popular Cadbury Mini Eggs in a different way-inside of a cupcake! I swear, everything is better if it’s in a cupcake. These cupcakes are moist, chocolatey, and easy to throw together. The Cadbury Mini Eggs are incorporated in the filling so you could use any flavor cupcake you would like.
The frosting is also the filling and I did that only because I still had some left and it was seriously too good! I could eat the filling by the spoonful. If you like other frostings, you can customize these babies however you’d like, as long as the fun suprise inside the cupcake is the Cadbury Mini Egg filling.

The other fun touch I added to these cupcakes was the green candy shred. I found it on the shelves in the Easter section of Walmart. I didn’t see it on their website but did find it here. If you don’t have access to it, you can always use coconut shred that you dye green. To do this, throw the shredded coconut into a baggie, add some green food coloring, close the baggie, and then massage the food coloring into the coconut. It will add that extra flavor to your cupcakes but coconut pairs well with chocolate.
It’s so fun to play with! After frosting the cupcakes, I immediately rolled each cupcake in the green candy shred to make it look like grass. I added some of the leftover Cadbury Mini Eggs to the top and then created a printable “Easter Egg Hunt” sign for the cupcake topper. I used some toothpicks and taped the printable signs to the toothpicks.
They turned out so adorable and just as delicious! They were a hit at our party and were gone in about 30 seconds. So be prepared, these will go fast and you will probably have people begging for more.
