If you’re like me, the thought of making a nice Sunday meal can be stressful. Sundays have always been my rest day, as well as holidays, but I usually end up stuck in the kitchen for most of the day, cleaning, cooking, and then cleaning again. Having company over adds a few notches to my stress level! That’s why I’m happy to be sharing a gourmet meal that is perfect for holiday gatherings, Sunday dinners, or having some friends over for a nice meal. I created this recipe for Crockpot Stuffed Apple Bacon Cornish Hens. I used Tyson® Premium Cornish Hens because they are great for any occasion, not just Thanksgiving and Christmas. Plus, I love that they are 100% natural with no artificial ingredients or added steroids. I don’t have to worry about what my guests are putting in their bellies. This recipe is delicious, easy to put together, and you won’t be stuck in the kitchen while still impressing your guests and family.
This recipe uses the casserole crockpot which is why I was able to fit three hens inside. If you’re using a regular crockpot, you may only be able to fit in two. Double check before you get everything together.
Ingredients:
3 Tyson® Premium Cornish Hens
1 package of bacon
1 box of Chicken Flavored Stuffing
For the rub:
1 Tbsp flour
1/2 tsp salt
1/4 tsp sugar
1/8 tsp garlic powder
1/8 tsp black pepper
For the sauce:
1 cup applesauce
1/3 cup brown sugar
2 tsps vinegar
1 tsp yellow mustard
1/8 tsp ground cloves
When I bought the hens, they were frozen. Be sure to thaw them in the refrigerator the night before. Once thawed, remove them from the package and lightly wash them.
Next, make the stuffing according to directions. While that’s cooking, mix the rub together and coat each hen in it. Stuff the hens lightly when the stuffing is ready.
Wrap the hens each in bacon. I used three pieces one way and three the other for each hen (it took the entire package of bacon). Spray your crock pot and place the hens inside. Put the rest of the stuffing around the hens. Cover and cook on high for 4 hours. Remember, I used the casserole crockpot so I was able to fit all three hens inside. If you have a smaller crockpot, you may only fit in two. That’s why I love having both!
After four hours, mix up the sauce. Save half of it for later and spoon the rest over the hens. You can keep the hens in the crockpot for another hour or so or, if you have the casserole crockpot, grab the stoneware pan and place it uncovered in the oven for half an hour. Remove the bacon.
When it’s done, boil the reserve sauce over low heat. It makes a yummy gravy! I served this with mashed sweet potatoes, green beans, and the stuffing.
This recipe was perfect for our family dinner. My kids were so excited when they saw how fancy it was. Plus, our house smelled amazing! With just a few simple ingredients picked up Smith’s, you can make your own gourmet dinner. Just don’t tell anyone how easy it was to put together. Let them be impressed and maybe they’ll do the dishes.
