This no-churn Butterbeer Ice Cream is fun and easy to make for any Harry Potter fan! Make a batch to enjoy while binge-watching the movies!
July is such a fun month for some many reasons. You have the Fourth of July, in Utah we have the 24th of July, it’s National Ice Cream Month, we have a few family birthdays, and it’s Harry Potter’s birthday! The perfect time of year to enjoy a classic wizarding world treat-Butterbeer!
I always feel like it’s a whirlwind of fun, sun, and exhaustion. But I’m joining up with my friend Marissa at Rae Gun Ramblings for her annual Happy Harry Potter Series. Which is why I love curling up with a good book in my air conditioned space when I finally have some downtime. While summer is full of thrills and entertainment, I’ve never been a huge fan of the heat. So celebrating “The boy who lived” by reading the books, watching the movies, and making fun treats is the perfect way to enjoy lazy summer days.
This year, I thought it would be fun to celebrate Harry Potter by whipping up some No-Churn Butterbeer Ice Cream. I haven’t yet ventured to Universal Studios yet to enjoy Harry Potter World but it’s on my bucket list and I will happily drink my own glass of Butterbeer! Until then, this cool treat is a fabulous alternative!
While I love making ice cream in my ice cream maker, the no-churn version is faster and easier when I’m in a hurry. And this recipe couldn’t be easier! You can make a batch in the morning and it will be ready for your Harry Potter movie night later that day.
The secret ingredient to any no-churn ice cream is sweetened condensed milk. Who knew, right? I rarely ever used it before but now I’m finding more and more ways to sneak it into recipes.
I also threw in some butterscotch chips. You can find these in the baking aisle next to the chocolate chips. I thought they added extra flavor and a nice crunch to the ice cream. Also, you can add in pumpkin pie spice if you want a little more flavor. I thought it tasted perfect without it but it’s up to you!

I did a little video to show you how it comes together with my oldest son. There were some bumps along the way (literally) but it came out just fine! He’s still learning to not bump the camera when I’m working.
