I had no idea when I bought my instant pot that I would have so much fun finding recipes and trying them out! It’s amazing all the things you can make with it. One of the biggest surprises was being able to make quick breads, including this amazing instant pot banana bread.
I’m really picky when it comes to banana bread. Most recipes I’ve tried come out dry and I’ve literally tried over a dozen! But after decided to use some overripe bananas one days for bread, I thought I’d try baking the bread in my every trusty instant pot. And I was NOT disappointed!
I used on of the most basic recipes I’ve tried and it turned out so much better. I think having the moisture of the instant pot helped keep it from drying out and made it amazing.
The only downside to making instant pot banana bread is that you have to use a smaller bread pan. I have a 6 quart instant pot and it was too small to use a regular sized pan. I didn’t mind because I actually enjoy using smaller sized pans! There is something so cute about making things mini. The recipe made two mini loaves of banana bread and I did have a small amount of batter left over.
You do have to bake each loaf separately but I promise it’s worth it! This banana bread will become a favorite. Plus, if it’s the middle of summer and you don’t want to use your oven, this is the way to go.
As I mentioned, this recipe is one of the most basic recipes I’ve had on hand and tried. It worked really well and I think simple is best in this situation. But if you have something special up your sleeve, try it! What could it hurt? I know a lot of people who like to add sour cream or pineapple to their banana bread.
Instant Pot Banana Bread

Ingredients
- 1 cup butter softened
- 2 cups sugar
- 4 eggs well-beaten
- 2 cups mashed bananas
- 3 cups flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 2/3 cup walnuts optional
Instructions

1. Cream together butter and sugar in mixing bowl.
2. Beat in eggs and bananas.
3. Sift together flour, baking soda, and salt.
4. Combine flour mixture with wet ingredients and mix until just moist.
5. (optional) Stir in nuts.
6. Grease two small mini loaf pans and pour batter evenly in each pan. (You can also use a smaller bundt pan).
7. Pour 1 1/2 cups of water in the instant pot and insert trivet.
8. Cover the loaf pans with foil. Place one of the loaf pans on top of the wire rack (trivet) inside the instant pot.
9. Place lid on instant pot and use manual setting to place it on high for 60 minutes.
10. Allow for natural steam release once time is up for 15 minutes. Then release whatever steam is left and open the lid.
11. Remove banana bread from instant pot once it’s finished. Place the other loaf pan inside and repeat baking instructions.
12. Allow banana bread to cool for 15 minutes before removing from pan.
