I think one of the most addictive candies around Easter are the mini Cadbury Eggs. Have you tried them? Oh my word, they are sooooooo good! My husband isn’t one to go crazy over sweets but he loves them too. Let’s just say, they don’t last very long in our house.
I decided to add some extra fun and make Easter bark with them. Candy bark is really easy to throw together and you can pretty much customize it however you want. You really just need melting chocolate and any other added ingredients you want to throw in.
I used Wilton candy melting chocolate. It comes in a lot of fun colors and melts pretty easily. I used about 1/2-3/4 bag of Cadbury Mini Eggs.
Grab an 8×8 pan or something just slightly bigger. I love using my Pyrex pans (it’s a set with a couple of different sizes). Put some parchment in the pan (it makes it so much easier to pull it out).
Melt the chocolate in the microwave in 30 second intervals, stirring as you go. When it’s nice and smooth, spread it in the pan and smooth it out.
Once the chocolate is melted, start throwing in your other ingredients. I used the Cadbury Mini Eggs and Easter sprinkles. I also like a little bit of salty with my sweet, so I threw some pecans in half of it.
Once you have it the way you like it, throw it in the refrigerater for 30 minutes to solidify. Break it up when it’s ready and eat, package, and give away!
