We recently visited the Happiest Place On Earth, Disneyland, for the second time with our kids. I have been there many times through the years but I decided to try something a little different this go around. While there were a couple of things I always enjoyed eating , there were still a lot of delicious foods left to explore.
And let me tell you, focusing on the food was amazing!!!
One of the items we tried was this delicious dessert at The Big Thunder Ranch BBQ. It was our third time visiting this little gem of a restaurant, set towards the back of Frontierland. We LOVE it there. All you can eat ribs? Beans? Corn Bread? It’s heaven. Plus, they have some great entertainment.
We had never tried a dessert though, and we chose the S’mores Bake. Oh my goodness, it was delicious! I’m a brownie lover and this just about did me in. I knew I had to recreate it when we got home because I wouldn’t want to wait another two or three years to try it again.
This is a rich dessert but so easy! You can eat it year round too, even in the middle of winter when you’re missing roasting marshmellows on a summer night.

Disneyland Inspired S'mores Bake
Ingredients
- For the Crust:
- 1 1/2 cups crushed graham crackers
- 1/3 cup white sugar
- 6 Tbs butter melted
- Brownie Layer:
- 1 Box Brownie Mix Ghiradelli's is my favorite, prepared according to directions
- Topping:
- 1/3 bag marshmellows
- 1/2 cup chocolate chips melted
- Graham cracker crumbs
- Graham crackers
Instructions

For the crust, mix all ingredients together. Press into a greased 9x13 pan. Prepare brownie mix according to directions for the pan you are using. Pour over crust. Bake according to directions on brownie box, taking care to not burn the crust. Remove from oven. Add marshmellows on top. Broil for 1-2 minutes until marshmellows are golden brown. You may also use a kitchen torch. Melt chocolate chips and pour over the top. To finish it off, top with graham cracker crumbs and graham crackers.
