Our house has been full of excitement lately. And not only because it’s Christmas but also because we have been anxiously awaiting the release of one of our family favorites, the Minions movie! It was released last week on December 8 and we took a trip to Target to grab it as soon as school was out. My kids ran down the aisles when they saw it in the display! We were so happy that Target had the display right at the front of the store so we couldn’t miss it. Target exclusively has The Minions Metalpak Blu-ray/DVD – Deluxe with 40 minutes of bonus material. We can’t get enough of the Minions movie so that bonus content was like an extra gift! Once we had the movie in hand, we were able to pick up treats and goodies (popcorn, chocolate, and soda) easily while at Target for our special family movie night.

When we have a movie night, I try to make it special for our kids. I don’t go too crazy; I’d rather spend time watching the movie than cleaning up the kitchen! The Minions movie from Illumination Entertainment was the inspiration for these Minion Banana Cream Pancakes. Our family loves breakfast for dinner and these Banana Cream Pancakes hit the spot! And I can just see those crazy minions yelling “Banana!” while shoveling bites into their mouths. Plus, my kids couldn’t get enough of the fun faces we made! We were sure to make a Stuart, Bob, and Kevin face. The pancakes tasted fantastic and added that special touch to our family movie night.
Here’s what you need to make the pancakes:
Pancakes:
2 ripe bananas, mashed
2 eggs
1 tsp Market Pantry Vanilla
2 Tbs melted butter
1 cup milk
1 Tbsp vinegar
1 1/2 cups Market Pantry Flour
2 Tbsp sugar
1 Tbsp brown sugar
1 tsp salt
2 tsp baking powder
Sliced bananas
Filling:
1 package banana cream pudding made according to directions
Faces
Blueberries
Whipped Cream
Sliced Bananas
Black Piping Gel
Directions:
Make banana pudding according to directions. Set aside. Mix wet ingredients for pancakes until well combined. Sift dry ingredients and add to wet. Mix until just combined (batter is slightly thick). Add 1/4 cup of batter to griddle and flip when golden brown. You can make shapes with the pancakes to mimick minion faces.
When the pancakes are all ready, stack three pancakes together, adding a layer of the banana cream pudding and sliced bananas in between each layer. To make the face, add two sliced bananas for the eyes. Pipe the black gel around the edges to look the minion’s goggles. Add a blueberry to each banana to complete the eyes. Use the piping gel to finish off the face. For an extra touch, use whipping cream around the edges of the plate and add more sliced bananas.
Our family gobbled these pancakes up! My kids kept asking to make more faces. Who doesn’t love to play with your food, especially if you’re a minion (or a wannabe)? Once our bellies were full, we had so much fun snuggling up and watching the Minions movie. There is nothing better than spending time together, especially when we were are able to laugh and be silly!
