I have always LOVED pancakes. Everyone knew they were my favorite breakfast food growing up and I was known, even at a young age, to scarf them down. My favorite pancakes over the years have always come from Village Inn-yum! Once I got married and left my mom’s cooking, I realized I had a problem-I discovered my distaste for pancake mixes. I tried several and they never had the same taste and flavor as the pancakes from Village Inn. Over the last few years, I’ve tried several homemade recipes, and new pancake mixes, but never had any luck. Until I happened upon this little recipe on allrecipes.com.
Hooray! You have no idea how excited I was when I made these and tasted how good they are. They are the closest I’ve come to finding that Village Inn recipe and I find that I’m completely content making my own pancakes at home. Just don’t tell my husband that-I still need my date nights out (we don’t do fancy restaurants, LOL). If you’ve been looking for a good, easy, homemade pancake recipe, give this one a try.

3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder

1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
cooking spray

1. | Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour”. |
2. | Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. |
3. | Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. |
