I LOVE Strawberries!! They are definitely my favorite fruit, next to Raspberries. I love going to summer parties and seeing the big plump Strawberries in fruit bowls and platters. I definitely eat my fair share of them!
This recipe for Patriotic Strawberry Lemon Bites is the perfect thing to take to a Fourth of July picnic or BBQ. The recipe itself can be used with or without the patriotic stuff and the filling makes the perfect fruit dip! Our family gobbled these up in no time so be sure to make plenty.
To make these beauties, here’s what you need:
1 lb strawberries
1 8 oz package cream cheese
1 cup powdered sugar
1 cup whipping cream
1 cup lemon curd (lemon pudding, or lemon flavoring should work too)
blue food coloring spray
patriotic sprinkles
patriotic picks
When I hull and cut strawberries (or any fruit), here are a couple of tools that work fabulously:
Once the strawberries are hulled and cut in half, it’s time to make the filling. Begin by creaming the cream cheese and powdered sugar together. Then, add the whipping cream and mix. Finally, add the lemon curd or pudding and mix well until soft peaks form.
Once the filling is ready, fill up a pastry bag with it. If you don’t have a pastry bag, use a plastic baggie and cut off the tip of one edge. Fill each strawberry (the tops mostly) with the filling. Next, spray some of them with blue food coloring spray. The last step is adding the sprinkles and patriotic picks. My kids loved helping me with the sprinkles!
