Pioneer Apple Cookies

Soft and chewy cookies with sweet, tangy apples!

Ingredients

  • 4 cups flour
  • 4 teaspoons baking powder
  • 1 Tbs cinnamon
  • 1 teaspoon allspice
  • 1 cup packed brown sugar
  • 1 cup butter softened
  • 1 tsp vanilla
  • 4 eggs
  • 3 cups finely chopped apples peeled
  • 2 cups raisins optional

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix four, baking powder, cinnamon, and allspice together in a medium bowl. Set aside.
  3. Cream brown sugar and butter together.
  4. Add vanilla and eggs and beat together until creamy.
  5. Stir in dry ingredients.
  6. Fold in apples and raisins (if using them).
  7. Drop by spoonfuls onto a greased cookie sheet.
  8. Bake 10-12 minutes (11 seemed to be just right). Test if its baked by inserting a toothpick, if it's comes out clean, they are ready.
  9. Do not overbake.
  10. These also freeze well! Store in an airtight container.
