Aloha Pineapple Bread

Ingredients

  • 1 cup butter
  • 2 cups sugar or Lite&Sweet
  • 4 eggs
  • 1 cup mashed bananas
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspon baking soda
  • 3/4 teaspoon salt
  • 1 20- ounce can crushed pineapple undrained
  • 3/4 cup chopped macadamia nuts
  • 1 cup coconut

Instructions

  1. Preheat oven to 325 degrees.
  2. Grease loaf pans (recipe makes 2 large loafs).
  3. In a large mixing bowl, cream butter and sugar (or Lite&Sweet).
  4. Add eggs.
  5. Stir in bananas.
  6. In a separate bowl, mix flour, baking powder, baking soda, and salt.
  7. Add in flour mixture to wet ingredients and blend well. Do not overmix.
  8. Add pineapple, macadamia nuts, and coconut and mix together on a low speed until blended.
  9. Pour into prepared pans, filling 2/3 full.
  10. Bake for 60-80 minutes (if using large loaf pans).
  11. Allow to cool before removing from pans.
