Crockpot Stuffed Apple Bacon Cornish Hens

Ingredients

  • 3 Tyson Premium Cornish Hens
  • 1 package of bacon
  • 1 box of Chicken Flavored Stuffing
  • For the rub:
  • 1 Tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 1/8 tsp garlic powder
  • 1/8 tsp black pepper
  • For the sauce:
  • 1 cup applesauce
  • 1/3 cup brown sugar
  • 2 tsps vinegar
  • 1 tsp yellow mustard
  • 1/8 tsp ground cloves

Instructions

  1. When I bought the hens, they were frozen. Be sure to thaw them in the refrigerator the night before. Once thawed, remove them from the package and lightly wash them.
  2. Next, make the stuffing according to directions. While that's cooking, mix the rub together and coat each hen in it. Stuff the hens lightly when the stuffing is ready.
  3. Wrap the hens each in bacon. I used three pieces one way and three the other for each hen (it took the entire package of bacon).
  4. Spray your crock pot and place the hens inside. Put the rest of the stuffing around the hens.
  5. Cover and cook on high for 4 hours. Remember, I used the casserole crockpot so I was able to fit all three hens inside. If you have a smaller crockpot, you may only fit in two.
  6. After four hours, mix up the sauce. Save half of it for later and spoon the rest over the hens. You can keep the hens in the crockpot for another hour or so or, if you have the casserole crockpot, grab the stoneware pan and place it uncovered in the oven for half an hour. Remove the bacon.
  7. When it's done, boil the reserve sauce over low heat. It makes a yummy gravy! I served this with mashed sweet potatoes, green beans, and the stuffing.
