Cadbury Mini Egg Cupcakes
A fun way to incorporate an Easter candy favorite into a cupcake!
Ingredients
- For the Cupcake:
- 1 box of chocolate fudge cake mix
- 1/2 cup oil
- 3 eggs room temperature
- 3/4 cup milk
- 1/2 cup sour cream
- 1 tsp vanilla extract
- For the filling:
- 8 oz cream cheese
- 1/4 cup butter softened
- 3-4 cups powdered sugar
- 1/2 bag Cadbury Mini Eggs 10 oz
Instructions

Preheat oven to 350 degrees.

In a large bowl, combine oil, eggs, milk, sour cream, and vanilla extract.

Stir in cake mix until nice and smooth.

Fill cupckae liners 3/4 full.

Bake for 15-20 minutes or until toothpick inserted in middle comes out clean.

Let cool completely before frosting.

For filling, combine cream cheese, butter, and powdered sugar until smooth.

In a food processor, finely crush Cadbury Mini Eggs .

Stir into cream cheese mixture.

Using a knife, cut a cone out of the middle of each cupcake.

Put the filling into a frosting bag and fill the middles of the cupcake, replacing the "lids" you cut out when filled.

Use remaining filling to frost the cupcakes.

Add green candy shred by rolling the cupcakes in the shred.

Place desired number of remaining Cadbury Mini Eggs to the top of frosted cupcakes.

Add "Egg Hunt" sign as a cupcake topper.
