The holidays always put me in a baking mood. I don’t know if it’s because of the family parties, the endless parade of Christmas movies, or my love for the smells and spices of the season. But whatever it is, I can’t seem to stop myself! Unfortunately, I don’t always have time to spend hours in the kitchen. The kids still need me, we still have after school activities, and I’m still expected to bring something yummy to all of our get togethers. And that’s why I love any recipe that can be quickly put together but tastes like I spent all afternoon baking it! My family and I love these Pumpkin Pie Brownies. They combine the seasonal flavor of pumpkin sandwiched between two layers of chocolate heaven.
I always need a recipe that I can pull together quickly. I am notoriously optimistic when it comes to managing my time-I always think I can fit more into the time I’m given and I end up in panic mode. My husband is used to me rummaging through the kitchen with just an hour to put a dessert together for a family party. And no matter how many times I say I won’t procrastinate, it always happens. Having a good stock on hand of essential ingredients that I can use to whip something up fast is key, as well as go to recipes that never fail me. These brownies are always gone in a flash and I’m always asked to bring them to gatherings this time of year.
Another reason to love this recipe is because it features so many of my favorite NESTLÉ® baking products. I was able to snag what I needed at Walmart. I stocked up on all of my favorite NESTLÉ® ingredients like Libby’s® 100% Pure Pumpkin, NESTLÉ® CARNATION® Evaporated Milk, and NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels. Walmart always has everything I need for baking!
The brownies start with a base of chocolate brownies. I used the NESTLÉ® TOLL HOUSE® Brownies & More. It was fast to put together and created a thick decadent layer of chocolate brownie goodness! It comes with a small bag of NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels that I add on the top of the brownies rather than mixing in. It ends up adding another small layer of chocolate which is never a bad thing, right?
The pumpkin layer is also easy. Be sure your butter is soft and I recommend whipping it first before adding any other ingredients. It helps it incorporate better. This pumpkin layer is very like a pumpkin buttercream frosting. And, like any frosting, the amount of powdered sugar you add may not equal exactly what is listed in the recipe. Keep adding it until you create a frosting like consistency that also tastes good.
The top layer is a basic chocolate ganache using the NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels and whipping cream. I know that some people opt to make this in the microwave but I have much better luck simmering the whipping cream on the stove and pouring it over the top of the morsels. It also helps to let it sit for just a minute or two before mixing it together. I’ve had many failures when making ganache and this method has never failed me!
To better cut the brownies, be sure to throw them in the refrigerator for a couple of hours. It makes cutting them so much easier and allows the layers to set! Be prepared to have the recipe on hand because I am always asked about it. Thankfully, it’s easy to remember!

Pumpkin Dream Brownies
Ingredients
- 1 box of NESTLÉ® TOLL HOUSE® Brownies & More and ingredients listed on box
- For Pumpkin Cream Layer:
- 1/2 cup Libby’s® 100% Pure Pumpkin
- 3/4 cup butter softened
- 1 teaspoon vanilla
- 1 teaspoon pumpkin pie spice
- 5 cups powdered sugar
- Chocolate Topping:
- 3/4 bag NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
- 6 Tbsp heavy whipping cream
Instructions

Make brownies according to directions using an 8x8 pan, adding a layer of chocolate chips on the top.

Bake, according to listed directions.

Meanwhile, in separate bowl, whip softened butter until creamy.

Add pumpkin, pumpkin pie spice, and vanilla and cream together.

Add one cup of powdered sugar at a time until getting a frosting consistency. You may add more if needed.

Once brownies have cooled, layer pumpkin mixture over the top.

Refrigerate until set.

Place chocolate morsels in a bowl.

Heat whipping cream until simmering. Pour over chocolate chips and mix until combined.

Spread chocolate topping over the top of brownies and allow to set.

Refrigerate and cut into squares.
