Harry Potter Butterbeer Popcorn

Ingredients

  • 10-12 cups popped popcorn
  • 1 cup light corn syrup
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 tsp butter extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 package butterscotch chips about 1/2 cup to 3/4 cup
  • 1/4 cup white chocolate chips

Instructions

  1. Preheat oven to 250 degrees.
  2. Pop popcorn and spread on baking sheet covered with foil.
  3. Bring corn syrup, brown sugar, butter, and extract to a boil until sugar is dissolved.
  4. Remove from heat and add butterscotch chips, salt, and baking soda. Stir until blended and smooth.
  5. Pour mixture over popcorn and stir to coat over popcorn.
  6. Bake for 45 minutes.
  7. Cool for 15 minutes.
  8. Melt white chocolate chips and sprinkle over popcorn mixture.
  9. Remove popcorn from pan and allow to cool completely.
  10. Break into smaller pieces and enjoy!
